This red wine marries extremely well with mature hard cheeses, with Parmigiano Reggiano made from cows’ milk, or mature Gouda. Try a mature sheep’s cheese, for example, a mild, fresh Pecorino or the Spanish Manchego. Or the French mountain cheese Beaufort, from the Savoyard Alps.
