The addition of sulfur in the cellar has long become a matter of faith among winemakers. Sulphur dioxide (SO2) is the most widely used and controversial additive in winemaking. Its main functions are to inhibit or kill unwanted yeasts and bacteria, and to protect wine from oxidation. Organic winemakers, however, are increasingly concerned that sulphites can cause potentially fatal allergic reactions and they certainly can impair the taste profile of wines.
As organic winemakers, we want to work as naturally as possible in the fields as well as in the cellar. After reducing the use of sulfur year by year, our Maître du Chai, Pierre Moser, created his first unsulphured wine in 2017. Working meticulous during the harvest and with the passion of an artisan winemaker for every little detail. We are excited about our Nature. Its aromas are strikingly different, pure, fresh, fruity, with lots of charm and finesse, fascinating and wholesome. A wine with a special scent and a different mouthfeel. With the Nature, Pierre demonstrates his skills and experience.
Dégustation: The colour is deep purple with purplish tints.
The nose is fresh, gourmet, pure, leaving in memory aromas of black cherry, ripe red fruits, spices.
The palate is supple, smooth, evolving towards young, coated tannins, with a cherry tonality, crushed black fruits, then towards a spicy, cocoa-flavoured finish.
Nature, nomen est omen. It is best to taste our Nature solo, without any great food. Maybe a good book or a piece of classical music or jazz. Or some tender dark chocolate with at least 70% cocoa content. Just close your eyes and enjoy Nature with all your senses. If needed the Nature is a perfect wine to accompany an entrecôte, game with cranberries or lamb with olives, green pepper, rosemary or thyme. And of course to a piece of Parmesan, Sbrinz, Pecorino or Manchego
Strong Syrah wines go perfectly with chocolate made of high quality cocoa beans.Our favorite is a piece of dark chili chocolate and a sip Syrah wine. The mix of bitter chocolate, chili notes and typical Syrah aromas of black currants and spices will delight you.
