While Marseille is recognised as the birthplace of Pastis, Saint-Tropez was one of the very first towns to launch its own Pastis in the early 1950s. Pastis 12/12 is keen to revive this local tradition while respecting the specific characteristics that make up the beauty of the Saint-Tropez peninsula. Its name comes from an old expression used by the boulistes (bowlers): each game being played to 13 points, ‘12/12’ means ‘match ball’ for both teams. Pastis 12/12 is produced in the Cristal Limiñana family distillery, the oldest distillery in Marseille (1884) and one of the few still operating in the city. The first stage in the creation of Pastis 12/12 is the distillation of star anise in column stills, followed by a series of carefully selected macerations of different plants and spices. These plants and spices are dried and then macerated in a very precise order to extract their aromatic virtues. A note of almonds completes the blend. This succession of distillates and macerations is filtered several times and blended to reach 45% alcohol.
